thats a not jewfish, its a wreck grouper, similar to the mystic grouper, too bad i wasnt there for that trip, the fishing sucks in sydney

When you reel a fish up from deep water the pressure builds up and pops their eyes out, if you plan to let em go you're supposed to pop them and realease the air, but it doesn't look like these two are going anywhere.
